It is a common occurrence in my home to look over and see 2 or 3 dorky Axolotl hanging from my big melon sword plant or my floating plants just relaxing, and I personally feel it is very enriching for them. You'd have to keep an eye on the axolotl when you first add them and see how it does. My Axolotl use the plants as hides, places to play and just generally utilize them in their everyday activities.
I don't think it would try to eat them, but you never know, and I'm more worried they may move them around or somehow squish themselves under them. Cycling a tank- Hides- axolotls need plenty of hides. One other possible issue is the rocks you have. Feeding Food- axolotls are carnivorous (meat eaters) and in the wild they are known to eat. One thing though is making sure they can get away from the light if they want to, that driftwood looks like it may provide that but I'm not sure if the holes are big enough on the inside, as they need room to turn around if it's not a tunnel. Most axolotls do appreciate the cover that any plants give them :) Axolotls enjoy the cover from the light that floating plants give and will squash or dig up a lot of plants rooted in substrate, best thing is to just try stuff and see what they like as axolotls vary in personality. Amazon swords are one of the plants I've heard don't do well in cold/dark water, maybe try some cryptocorynes and anubias? I'd also recommend trying out a tiger lotus plant, they're super pretty and they can grow lily pads.
